Purple Cabbage Salad

INGREDIENTS:

  • 2 purple cabbages
  • 4 Naranjillas
  • 4 Oranges
  • Half a pineapple
  • 1 cup of vinegar
  • 1 cup of olive oil

PREPARATION:

Cook the cabbage with the juice of the 4 naranjillas, 4 oranges and pineapple, when it’s almost ready add the cup of oil, vinegar and season with brown sugar, clove, cinnamon and pepper.

Corn and Chocho Salad

INGREDIENTS:

  • 3lbs. of cooked chochos
  • 3lbs. of peeled corn
  • 2 jars of cut olives
  • 1 jar of mayonnaise

PREPARATION:

Mix the chchos with the corn and add the olives and the mayonnaise.

Prune Sauce

INGREDIENTS:

  • 2 bags of pitted prunes
  • 1 cup of brown sugar
  • 1 cup of cooking wine
  • 1 and a half cups of Oporto
  • Clove
  • Cinnamon
  • 1 pinch of nutmeg
  • 1 spoonful of mustard

PREPARATION:

Blend the prunes with the wine and sugar. Take the mixture to the stove and add the clove, cinnamon, nutmeg and mustard. Let it boil for 15 minutes after which put aside and let cool.

Champagne Sauce

INGREDIENTS:

  • 3 table spoons of flour
  • 4 table spoons of butter
  • 1 cup of chicken broth
  • 1/2 package of heavy cream
  • 1 cube of Maggie broth
  • 1 cup Champagne

PREPARATION:

Melt the butter in a casserole. Add the flour and stirr until forming a paste, cook on slow heat. Sift the mix to make sure no lumps are left, then add the broth, cream and champagne, mixing well and let cook for 10 minutes on medi

Rasberry and Oporto Sauce

INGREDIENTS:

  • 1 cup of orange marmalade
  • 1 cup of Oporto
  • 4 table spoons of lemon juice
  • 21/2 cups of rasberries
  • 4 table spoons of corn flour
  • 1/4 of a teaspoon of grinded pepper

PREPARATION:

Put the marmalade in a small pot, add the oporto and the lemon juice, cook for 5 minutes on low heat. Blend the raspberries and sift them to eliminate the seeds, then add them to the mix and cook for another 5 minutes. Dissolve the corn flour with a spoonful of cold water, add to the sauce and cook on low heat until the mix thickens, then put to side and add the pepper.

Rice with Coca Cola and Nuts

INGREDIENTS:

  • 1 1/2lbs. of rice
  • 1 liter of Coca Cola
  • Salt
  • oil
  • Nuts

PREPARATION:

Cook the rice with the Coca Cola, salt and oil. When it's ready add the nuts.
